4 c. crunchy or smooth peanut butter
1 c. (2 sticks) butter, at room temperature
6 c. powdered sugar
2 tbsp. vanilla extract
1 (12oz.) bag semisweet chocolate morsels
In a large mixer bowl, beat the peanut butter, butter, powdered sugar and vanilla together.
Cover and chill until firm, or overnight.
Roll into balls about 1 inch in diameter, and place on shallow, wax paper lined pans.
Chill until firm.
In the top of a double boiler, melt the chocolate morsels.
With a candy dipper or toothpick, dip the balls into the chocolate and drain on a cake rack.
When firm , refrigerate until serving time.
Makes about 3 dozen Buckeyes.
Store in refrigerator.
